DAVE Hollamby has a fire in his belly.
The superstar Cock ‘n’ Bull chef is coming into the Great Taste of Echuca-Moama as the only competitor to have cooked in all four competitions.
But coming off the back of the only year he hasn’t come away with the win he is itching to get under way.
Although Dave was keeping tight-lipped about his five-course menu he said the crowd can expect it to be interesting.
‘‘My menu will be a bit different and probably something people haven’t tried before,’’ he said.
‘‘I love working with seasonal produce and I am always looking to plate up something a little bit different.
‘‘It is just the way I cook and when I go out for dinner I like to try something different or that I wouldn’t cook at home.’’
Dave said as he runs a restaurant that isn’t open all the time the Great Taste is a time to show off his cooking.
‘‘I guess it is allowing me to keep my hat in the ring as I don’t run a restaurant day in day out,’’ he said.
‘‘It is always a challenge but it is also great fun and to be able to raise money for the local hospital is just another reason I keep coming back.’’
Dave will be up against Phil Edwards (The Sweet Meadow), Dave Palmer (Junction), Dave Bowman (The Restaurant Echuca) and Nathaniel Place (Echuca Workers and Services Club) and said he is looking forward to the social aspect of the competition.
‘‘As chefs we don’t always have a lot of time to mingle, so it will be a great night,’’ he said.
Although making a dish for more than 200 people is a challenge, Dave said the biggest hurdle is to make that dish stand out.
‘‘With it being a competition you want to make something that is going to blow people away and I hope my five dishes will do that this time,’’ he said.
‘‘It is not easy and a lot of preparation goes into making our dishes.’’
The night raises money for the Victorian Police Blue Ribbon Foundation which goes towards the purchase of equipment for the Echuca Regional Health Emergency Department.
To date they have raised more than $96,000 for the foundation.
The night will also feature David Mann OAM as MC who is the chair of the Victorian Blue Ribbon Foundation and Winner of MasterChef Australia 2013 Emma Dean.
