Goulburn Valley Water will temporarily close the pipes from Thursday, February 27, until further notice.
The authority will use raw water instead of treated drinking water to maintain public green spaces, including lawns and sporting fields.
The decision was made to conserve water supplies under Euroa's Stage 2 water restrictions, implemented in April 2019.
Goulburn Valley Water operations manager Steven Nash apologised to users of the standpipes for the inconvenience.
“The decision to close the standpipes has not been taken lightly and we have waited as long as possible before doing so, however our priority is to maintain the treated drinking water supply to Euroa and Violet Town residents,” Mr Nash said.
“Using raw or untreated water takes the pressure off the area’s precious drinking water supply and will position us better in coming months, particularly if there’s below-average rainfall through autumn.”
Farmers who buy water from the standpipes will have to source their water elsewhere.Water from standpipes can be sourced from neighbouring towns, including Shepparton, Seymour, Nagambie and Murchison.
