Taking over the hotel alongside several family members at the beginning of April, co-owner John Finn said the team at the Falcon would continue to take baby steps in its resurrection.
“It’s quite new, but we’re looking at bringing everyone along with us on the journey,” Mr Finn said.
“The experience has offered a massive learning curve; but we have a goal and a vision in mind.”
Located 17km east of Echuca along Murray Valley Highway, the Falcon Hotel Motel is a family-friendly establishment with a focus on “good food, cold beers and a pleasant atmosphere”.
Mr Finn said there was a good variety of dishes on the menu.
”Parmigianas, the steaks are exceptional, stirfry, soup of the day, a variety of sweets —all the usual suspects,” he said of chef Peter Neilson’s menu.
“It’s a nice pleasant drive out to have a good meal, a cool drink or a coffee.”
With open mic nights held on the first and third Sunday of each month, Mr Finn said the hotel would continue to find ways to encourage entertainment and socialisation.
“We’re going to focus on using local talent and musicians to the area,” Mr Finn said.
“There is an open fire, you can sit around and have a chat and we’ve got a pool table.”
If you’re looking to make a trip out of it, the hotel has affordable accommodation on site, while a function room is also available for hire.
“We have five triple rooms for $99 a night —and that includes a continental breakfast,” Mr Finn said.
The team will also look to host an event in July to relaunch the hotel.
