Gelato on High is your one stop-shop for all things Italian ice cream and it all comes from the heart.
Owner Rachel Cleary has been immersed in the world of frozen treats from a young age.
“When I was young, my family and I would go to Melbourne in search of the perfect gelato,” she said.
“My father is from the Tuscany area of Italy, so it’s part of my heritage.”
After running the Rochester Caltex for several years, she decided to bring this new business venture to the twin towns.
“It’s been a dream of mine for a long time to have my own gelateria,” she said.
“I’ve always loved serving food to people and this was a way of bringing that love and my love for gelato into one project.”
After 12 months of research, planning and hard work, Gelato on High was born.
“I spent so much time trying to find the perfect vendor to get my gelato,” she said.
“Although I couldn’t make it myself, I wanted to give my customers a premium product everyone loves.”
While she looked, she came across a company called Maleney Food Co - the missing piece of the puzzle she had been looking for.
“I really connected with Maleney Food Co and loved what they stood for and their process,” Rachel said.
“They use fresh, natural ingredients and use traditional, artisan techniques and I just loved that.
“So, I flew up to Queensland to try their product and fell in love.”
There’s a misconception that gelato isn’t ice cream, but Rachel wants to assure everyone that it is, in fact, Italian ice cream with a few slight differences.
“Gelato is made from milk, not cream, which actually makes the mixture creamier,” she said.
“It is also churned slower, meaning less air is incorporated, making for a smoother mixture.
“It is also served at a lower temperature, which means you get the flavour hit straight away instead of having to wait for it to warm up in your mouth to allow you to taste the flavours.”
Rachel also puts a lot of thought into the flavours she puts out for everyone to try, but she doesn’t do it on her own.
“I’ve chosen a lot of the flavours because they’re family favourites, but I also get feedback from the customers too,” she said.
From Cherry Ripe and chocolate mousse to cheesecake and raspberry and white chocolate, there’s bound to be a favourite somewhere.
There’s also some yummy fresh sorbet for you to try too.
Rachel is also venturing out into other treats with the introduction of waffles and churros for customers to try.
