The man behind the wheel in the crash, 18-year-old P-plater Indika Bambrick Samarasinghe, was on Sunday refused bail after being charged over Saturday's incident.
A five-year-old girl was one of two patients in a serious but stable condition in hospital after previously being placed in an induced coma with critical injuries.
Another patient was in a serious condition, while four were stable and four discharged, a NSW Health spokesperson said hours before the Knights were due to take the field in the NRL grand final.
Multiple fundraisers have been established for the victims of the incident, which happened near a roundabout at Wallsend, outside Newcastle.
More than $35,000 had been raised for the wounded girl and her mother, who was also injured in the crash.
"Our family is asking for your help following a devastating incident on Link Road that has left our loved ones facing an incredibly difficult and uncertain road ahead," the girl's aunt said.
"Both mum and child now have a long road ahead of them, with ongoing surgeries, hospital stays, rehabilitation and recovery."
They were injured when Samarasinghe's BMW careered into a crowd gathered on the side of the road to farewell the Knights on their journey to Sydney for the match.
Among the group was Chris Clancy, who said there was a carnival atmosphere at the roundabout with cars beeping their horns and people waving before the disaster unfolded.
"The next thing, this car stops (at) the roundabout and then he just floored it on the wet ground, lost it," he told AAP.
"It happened in seconds, but when you stand there, seeing the car coming at you, I honestly thought I was going to die. It just felt like slow motion."
Mr Clancy suffered fractures in his ribs, spine and foot, and a broken collarbone.
Samarasinghe was taken to hospital for mandatory testing and subsequently charged with nine offences, including dangerous driving occasioning grievous bodily harm, negligent driving and causing bodily harm by misconduct.
He did not make any application for release during a brief court appearance on Sunday and was formally refused bail.
The bail court was told the most serious offence of dangerous driving occasioning grievous bodily harm carried a maximum jail term of seven years.
Samarasinghe will next appear at Newcastle Local Court on October 15.Â
Investigators did not believe the incident was deliberate but previously declined to comment on reports the vehicle was being driven erratically before the crash.
Dave Martin, 67, was also injured after being struck by the car while trying to protect his two young granddaughters, sustaining multiple fractures in both legs and undergoing a lengthy surgery.
He was known in Wallsend for his love of the Knights, often decorating his barber shop on Nelson St with team paraphernalia.
Knights chief executive Peter Parr expressed deep concern for those impacted by the crash.
"Newcastle is a strong community," he said.
"We have seen that strength throughout this week and today we need to draw on it again with compassion, care and support for those who need it most."
Officers are coordinating a high-visibility operation across the Newcastle and Hunter areas after the game.
NSW Police have asked the public not to congregate on major motorways as no fan engagements are planned for Sunday.
