Detective Senior Constable Mathew Ford of Campaspe Criminal Investigation Unit said the man was involved in two separate confrontations at the old Information Centre car park on Saturday 31 October before becoming violent during his arrest and again while in custody.
"The accused approached the first victim in his vehicle and had a brief conversation before becoming aggressive," Det Sen Constable Ford said.
Police allege the man then produced a knife and punched the victim in the face.
"The victim drove off while the accused damaged his vehicle," he said.
Despite being punched, the victim was not physically injured.
A short time later, police allege the man approached a woman who was standing outside her vehicle in the same car park.
After a brief conversation, the man allegedly stole the woman's mobile phone from the vehicle door.
Police were called and found the man soon afterwards.
Det Sen Constable Ford said the man violently resisted arrest, punching and spitting on an officer during the confrontation.
He was taken to Echuca Police Station where detectives allege he assaulted a second officer while being held in custody.
"No officers were injured and no medical treatment was required," Det Sen Constable Ford said.
The 26-year-old Maryborough man has been charged with assault, assault with a weapon, criminal damage, resisting police and three counts of assaulting police.
He was remanded in court to appear at Bendigo Magistrates Court on Monday 2 November. The court heard he was already on bail for similar offending at the time of the alleged incident.
He was refused bail and remanded in custody to reappear before Bendigo Magistrates Court in February 2027.
